This tofu chocolate pudding is the perfect dessert/snack: it's downright delicious, is high in protein, ready in 10 minutes, and requires only 5 ingredients. What else could we possibly ask for, right?! So if you're looking for a quick and healthy snack recipe to satisfy that mid-afternoon craving, I got you covered!

So let's start with the ingredients, shall we? To prepare this tofu chocolate pudding, you only need the following 5 ingredients:
- dark chocolate (with at least 70% cocoa percentage)
- silken tofu
- cocoa powder (unsweetened)
- sugar or maple syrup
- salt
Silken tofu
The main ingredient of our tofu chocolate pudding is silken tofu. If you've never heard of it, let me explain what it is.
Silken tofu is a type of tofu with a high water content. This makes it perfect for making creams, desserts, etc. as it can be easily blended without leaving lumps.
Now that you know what silken tofu is, you're probably wondering where you can find it. Until a few years ago, it could only be found in supermarkets that specialized in Asian food. Today, it can be found in the vegan section of many supermarkets, where other types of tofu are also featured.
Silken tofu: a real protein bomb
This pudding is a great source of protein. That's because silken tofu contains 7.5 grams of protein per 100 grams of the product.
This means that one serving of pudding (120 grams) contains about 10 grams of protein! So this dessert is not only delicious but also healthy and satiating!
Dark chocolate
Many people don't know it, but dark chocolate is vegan. That's because chocolates with a cocoa content of at least 60 percent usually do not contain milk and are therefore vegan (Yay!).
To be on the safe side, it's always best to check the label, but I'm sure you'll have no problem finding vegan dark chocolate in any supermarket.
Let's make the pudding!
To prepare this tofu chocolate pudding, we first melt the chocolate in a water bath. Once melted, we put it in a food processor along with the rest of the ingredients and blend for a few seconds until we get a super creamy and lump-free cream.
Then we divide the pudding into four 250 ml containers and let them rest in the fridge for at least 2-3 hours. Before serving, we can sprinkle them with some cocoa powder and a pinch of salt flakes.
How to store the pudding
You can store the pudding either in the freezer or in the refrigerator (depending on how long you want to store it for).
In the refrigerator: cover the pudding with plastic wrap and serve it within 3-4 days.
In the freezer: cover the pudding with plastic wrap and freeze for up to 1 month. Defrost it overnight in the refrigerator before serving.

Ingredients
- 500 g silken tofu
- 80 g dark chocolate melted in a water bath
- 1 tablespoon cocoa powder unsweetened
- 2 tablespoons sugar or maple syrup
