    I love this recipe because it's ready in just 30 minutes and tastes amazing. I whip it up all the time when I'm short on time but still want something healthy and tasty. It goes great with a salad, too.

    Plus, this recipe is super handy. I always make a few extra vegan oat schnitzels to freeze. Then, when I need something quick, I just grab them from the freezer the day before, let them thaw in the fridge, and the next day, I just cook them in the pan for a few minutes. Boom, lunch is ready! So, not only is this recipe delicious, but it's also really convenient!

    Making these oat schnitzels is a breeze. It only takes 30 minutes and 9 ingredients. Here are the key ingredients for this recipe:

    • Quick oats: This is the main ingredient for these schnitzels. I use quick oats because they absorb liquids faster and create schnitzels that don't fall apart in the pan.
    • Breadcrumbs: I use these to make the schnitzels super crispy and delicious. I recommend using fine breadcrumbs, not panko.
    • Spices & herbs: I like to season the schnitzels with a mixture of finely chopped herbs like rosemary, sage and thyme and spices like paprika and garlic powder because they add a touch of flavor and make the schnitzels really tasty.
    • Mustard: This adds a touch of umami and makes the schnitzels super flavorful.

    To make these vegan schnitzels, all you need is a big bowl to mix everything and a frying pan to cook them. I’d suggest using a big spatula to flip them gently while they’re cooking so they don’t fall apart.

    Step 1: Mix the oats, garlic powder, herbs, mustard, paprika, and salt in a bowl. Pour in the hot soy milk, give it a good stir, and then cover the bowl for 15 minutes. After 15 minutes, stir the mixture again and shape it into four equal-sized balls.

    Step 2: Spread the breadcrumbs on a plate. Press each ball with your hand in the breadcrumbs to form schnitzels about 5 mm thick.

    👨🏻‍🍳 Expert tip

    If the oat schnitzels fall apart after shaping, it means the mixture is too wet. Just add a little more quick oats or breadcrumbs and mix it all up again before forming the schnitzels again.

    And when you're cooking them, be gentle when you flip them. Use a spatula and flip them carefully. That way, they'll keep their shape without breaking.

    💭 Top tip

    Back before I went vegan, my mom would always finish off her schnitzels with a squeeze of lemon juice before serving them. The lemon juice gave the schnitzels a refreshing twist and made them taste even better.

    This little trick works just as well with these vegan oat schnitzels too.

    ❄️ Storage

    These vegan oat schnitzels freeze perfectly. After shaping them, simply place them in an airtight container and store them in the freezer for up to 2-3 months. When you're ready to cook them, just take them out of the freezer the night before and let them thaw in the refrigerator overnight.

    Alternatively, you can prepare the schnitzels ahead of time and store them in the refrigerator for up to 3 days.

    Can I use other types of oats?

    For this recipe, I recommend using quick oats or finely ground oats. If you use too large oat flakes, the oat schnitzels may tend to break apart during cooking.

    Can I cook the vegan oat schnitzels in an air fryer?

    Yes you can, brush them with olive oil and cook them for about 10 minutes at 180 degrees Celsius (360 Fahrenheit) until they're golden.

    Can I cook the vegan oat schnitzels in the oven?

    I don't recommend using the oven for this recipe because the schnitzels turn out too dry.

      Could someone please tell me the ingredients in cups? I don't have kitchen scales and I have no idea what these amounts are. The result looks good though!

      I made it this recipe cause the only thing I had in my cupboard was Oats, So I decided to give it a try!!
      it was a very nice surprise. Loved the taste and the texture. The next day I made a sandwich with the leftover and it was amazing!

      If you add some vegan egg powder (flaxseed powder)would that help the mixture hold together better for easier handling? Thank you. These look great!

        Hi Eileen, I would not add flaxseed because of the nutty flavor. If you are afriad that the schnitzel won't stick together you can blend your oats a little, the more processed the oats the stickier they'll be. I hope this helps. Best, Carlo
