    I love this recipe because it's perfect for grilling in the summer. Usually, I prepare the kabobs the day before and let them marinate overnight in the refrigerator. The next day, I get the grill ready, and once it's hot, I grill them for a few minutes. They taste amazing!

    The curry marinade really enhances the flavor of the seitan, making each bite juicy and delicious. Plus, the preparation is so simple, it leaves me plenty of time to enjoy the outdoors and the company of friends and family. These kabobs have become a staple at our summer gatherings, always impressing everyone with their savory goodness.

    🧾 Ingredients

    To make this recipe, you only need a handful of ingredients, most of which you probably already have in your kitchen.

    • Seitan: It's the main ingredient in this recipe. I use it because it creates kabobs with a texture similar to traditional ones and absorbs the marinade, making them super juicy and delicious. Seitan is also rich in protein and easy to prepare, which is always a plus for me. To make it you can use my vegan chicken recipe.
    • Spices: To make the marinade, I use curry powder, smoked paprika, and garlic powder. Curry powder adds a warm and aromatic complexity, smoked paprika contributes a rich and smoky undertone, and garlic powder enhances with its savory and pungent notes.
    • Maple syrup: I add it to give a bit of sweetness to the marinade. It deepens the flavor and makes the marinade taste even better.
    • Rosemary: There's no spice that makes grilled skewers better than fresh rosemary. It adds a touch of freshness and makes them flavorful. I recommend using fresh rosemary rather than dried for the best taste.

    To make this recipe, you only need a bowl to mix the marinade ingredients, an airtight container to marinate the seitan in the fridge, and a grill or frying pan to cook them.

    Step 1: For the marinade, combine curry powder, paprika, garlic powder, maple syrup, salt, rosemary, and vegetable oil in a large bowl. Mix until smooth.

    Step 3: Mix well until they are coated. Place them in an airtight container and let them rest in the fridge for at least 20 minutes, or ideally overnight.

    Step 4: Skewer the marinated seitan evenly onto 4 kabobs. Place the kabobs on the hot grill and grill for 6-7 minutes, flipping them once halfway through cooking.

    👨🏻‍🍳 Expert tip

    Here's a tip for grilling these kabobs: Since the marinade includes maple syrup, it's crucial to control the grill temperature. If the grill is too hot, the sugars in the maple syrup can cause the kabobs to burn quickly. Aim for a medium-high heat setting to achieve a nice caramelization without burning.

    Additionally, consider soaking the wooden skewers in water for about 30 minutes before skewering the seitan chunks. This prevents them from burning on the grill and ensures they cook evenly.

    💭 Top tip

    For enhanced flavor, I recommend marinating them at least 1 day in advance and letting them rest in the fridge overnight. This allows the seitan to fully absorb the marinade, resulting in kabobs that are incredibly flavorful and tender.

    ❄️ Storage

    To store these vegan kabobs, let them cool to room temperature after grilling. Once cooled, place them in an airtight container or wrap them tightly in foil or plastic wrap to prevent drying out. Refrigerate the kabobs and they will stay fresh for up to 3-4 days. When you're ready to enjoy them again, simply reheat in the microwave or oven until heated through.
