    Equipment

    • hand mixer

    Ingredients

    • 2 cup

      coconut milk

    • 1 cup water
    • 70 g brown sugar
    • pinch of salt
    • 45 g cacao powder
    • *120 g dark chocolate
    • **1 tsp agar agar powder

    Instructions

    • Place milk, water, sugar and salt in a saucepan and heat over medium heat.
    • In a bowl, whisk cacao powder with 4 tbsp of water until lumps free then pour into the milk mixture and stir.
    • Add in the chocolate and stir until dissolved.
    • Place agar agar in a glas, add in 1 tbsp of water, stir and pour into the chocolate mixture.
    • Bring the mixture to a boil, then boil for 1-2 minutes.
    • Pour the mixture into a mold, let it cool completely before placing in the fridge. Let it rest in the fridge for a couple of hours before serving.
    • Buon Appetito!

    Notes

    * Most of the time dark chocolate is vegan, make sure to check the ingredients to be 100% sure the one you purchase is plant-based.
** The agar agar powder I use is strong, make sure to use enough powder to stabilize 9 deciliter of liquid. Check the instructions on the package to be sure you use it correctly.

I’ve been trying a lot of chia seed puddings. I think I will try substituting chia seeds for the agar agar and see what happens.

Searched locally for agar agar powder. Not sure if carried in the stores, but online a substitute is cornstarch.
How would this change the texture or taste?

Do you know if the proportion will be the same if I use regular milk? I have nothing against vegan stuff but I am allergic to coconuts.

Hi! I’ve never made it with “regular” milk so I’m unable to answer. Coconut milk works perfectly because of its thickness so I’d rather replace it with a thick cashew milk 🙂 i hope this helps.

When I needed agar agar before, I looked everywhere. The only place I was able to find it was a specialty health store and it was very expensive. It is definetely not easy to find unless ypu order it on line. People don't even know what it is.

Yes you can use gelatin even though they’re saying not to because it is an animal product. This is a vegan recipe but you don’t have to make this a vegan recipe. You can use regular milk and gelatin.

You can try but you’d have to add more coconut oil to compensate the missing cacao butter that stabilises the pudding 🙂

It’s a vegan recipe. I’d never suggest to use “regular” milk for ethical and health reasons. You can find plant-based milk everywhere 🙂

There isn’t. Gelatine is not vegan so it’s not an option. But you can find agar agar quite easily in any supermarket 🙂

I can't wait to try this recipe. It looks so good, but I did want to pop in to say I have visited 5 grocery stores, a Whole Foods and a Fresh Market, and none have agar agar. I ordered it off Amazon. Anyway, I live in a medium sized city, so it's not too easy to find in stores. Amazon has multiple different versions though.

I guess it depends where you live. Here in Seitzerland you can find it easily. Be sure to order powdered agar agar and not agar agar flakes. ❤️ I hope you’ll love it! Let me know how it turns out 🥳

The coconut milk - is it the thick, canned one or the more liquidy carton one?

So you use the carton ones which also come in Almond Milk etc, not the coconut milks which come in a can you use for curry's etc? THANK YOU. Can't wait to serve this this weekend.

Dear Jekaterina, you can use it but the pudding won’t be as creamy. I’d use cashew milk to replace coconut milk if I were you. I hope this helps 🙂
