Are you looking for a vegan Parmesan cheese? Good news, I have the perfect recipe for you! All you need is a food processor, 5 minutes of time and only three ingredients: cashews, nutritional yeast and salt.

How do I make vegan parmesan?
All you need to do is placing all the ingredients in a food-processor and process for a couple of seconds until the cashews start releasing its oil.
Do I have to use cashew nuts?
You can use cashews or macadamia nuts. The only difference is that with macadamia nuts you get a crunchier texture.
Can I replace nutritional yeast?
You can't really replace it in this recipe. Nutritional yeast gives that "cheesy" flavor you want your Parmesan to have.
How do I store it?
To keep Parmesan fresh place it in a glass jar and keep it in the freezer.

- 200 g cashew or macadamia nuts
- 1 tsp salt
- 2.5 tbsp nutritional yeast
Instructions
- Place all the ingredients in a food-processor and process until the nuts start releasing its oil.
- Place in a glass jar and store in the refrigerator.

Hi, we have a life threatening peanut and tree nut allergy in the family so I was wondering if I could substitute pumpkin or sunflower seeds instead of cashews? Your thoughts? Thank you

I’d rather try with sunflower seeds because they’ve got a more neutral taste. I hope this helps 🙂
