Vegan Oat Schnitzel

These oatmeal schnitzels are the perfect comfort food: quick to prepare, low-cost and can easily be made gluten-free! Before you jump into the kitchen, I recommend you read this blog post carefully. The recipe is simple, but there are a few steps you need to follow.

Ingredients

  • 200 g quick oats
  • 1 teaspoon garlic powder
  • 1 teaspoon finely chopped herbs mixture rosemary, sage, thyme
  • 1 tablespoon mustard
  • 1 teaspoon sweet paprika powder
  • ½ teaspoon salt
  • 180 ml unsweetened soy milk warmed up
  • 150 g breadcrumbs
  • oil for frying

Instructions

  • Mix the oats, garlic powder, herbs, mustard, paprika, and salt in a bowl. Pour in the hot soy milk, give it a good stir, and then cover the bowl for 15 minutes. After 15 minutes, stir the mixture again and shape it into four equal-sized balls.
  • Spread the breadcrumbs on a plate. Press each ball with your hand in the breadcrumbs to form schnitzels about 5 mm thick.
  • Heat some vegetable oil in a non-stick frying pan. Once the oil is hot, add the schnitzels and fry them on both sides until they're golden brown. Place the schnitzels on a piece of baking paper to soak up any excess oil.
  • Serve with some mayo and vegan ketchup. Enjoy!
