Spicy Korean Cucumber Salad (Traditional Recipe)

If you like cucumbers, sesame seeds and chilli this korean cucumber salad is perfect for you.

Ingredients

– baby cucumbers – Korean chili flakes (gochugaru) – rice vinegar – light soy sauce – garlic cloves – roasted sesame seeds

Korean Chili Flakes

You can find them easily in any Asia store. They are not so easy to substitute because they have a distinctive taste and are not too spicy.

1. Cut the cucumbers

Start by placing a cucumber between two chopsticks and cut it diagonally (with a 45° angle). Then flip the cucumber and cut it straight.

That's how the cucubers should look once cut. 

2. Make the sauce

In a bowl, mix all the sauce ingredients until combined. If the sauce is too thick you can add a splash of water.

3. Mix mix mix

Pour the sauce over the cucumbers and mix until coated. Allow to rest for 15 minutes and serve straight away.

4. How to store

If you have any leftovers don't throw them away. You can place the salad in an air-tight container and store it in the fridge for 1 day.
