Add flour and spinach to a food processor and blend until you get a grainy mass**.
Transfer mixture to a bowl and form into a ball.
Wrap dough with plastic wrap and let rest in refrigerator for 15 minutes.
Divide dough into 4 pieces, take one piece and wrap the remaining 3 in plastic wrap.
Flour a work surface and shape dough into a rectangle.
With pasta machine:
Adjust the rollers of the pasta machine to the widest opening and feed the dough through the rollers.
Fold the dough and pass it through the rollers again.
Repeat the process 2-3 times. Once the dough is smooth, set the rollers 1 step tighter and feed through. Keep tightening the rollers until the dough sheet is about 2 mm thick.
Use a pasta cutter attachment to cut the pasta-sheet into tagliatelle-noodles. Feed the sheet of pasta into the cutting attachment***.
Repeat the process with the remaining dough.
Without pasta machine:
With a rolling pin, flatten the dough into a rectangle shape (2 mm thick).
Roll up dough-sheet and cut it into 5 mm wide slices.
Repeat the process with the remaining dough.
Cooking Time
Cook the pasta in boiling water for about 5 minutes, drain and serve with a sauce of your choice.

**Without food processor: place flour on a clean work surface and form a well in the center. Add spinach to the well and, using a fork, gradually mix with the flour from the inside out.
