Vegan Chocolate Pudding Cake
This vegan chocolate pudding cake is absolutely delicious. Serve it with a scoop of coconut whipped cream and you'll have a perfect dessert!

- 200 ml coconut milk ((⅘ cup)
- 250 ml water ((1 cup))
- 70 g brown sugar ((2½ oz))
- 1 pinch of salt
- 45 g cacao powder
- *120 g dark chocolate ((3½ oz))
- **1 teaspoon agar agar powder
Place milk, water, sugar and salt in a saucepan and heat over medium heat.
In a bowl, whisk cacao powder with 4 tablespoon of water until lumps free then add into the milk mixture and stir.
Add in the chocolate and stir until dissolved.
Place agar agar in a glas, add in 1 tablespoon of water, stir and pour into the chocolate mixture.
Bring the mixture to a boil, then simmer for 1-2 minutes.
Pour the mixture into a mold, let it cool completely before placing in the fridge. Allow it to rest in the fridge for a couple of hours before serving.
* Most of the time dark chocolate is vegan, make sure to check the ingredients to be 100% sure the one you purchase is plant-based.
** The agar agar powder I use is strong, make sure to use enough powder to stabilize 9 deciliter of liquid. Check the instructions on the package to be sure you use it correctly.
