Vegan Bean Brownies

If you’re looking for a chocolaty, decadent and rich treat these Butter Beans Brownies are perfect for you. They’re super easy to make, you literally have to put all the ingredients in a food processor and blend until smooth!

Ingredients

  • 250 g canned butter beans
  • 100 g applesauce
  • 2 dl coconut milk
  • 150 g cashew butter
  • 90 g cacao powder
  • 2 tablespoon coconut oil
  • 1 dl maple syrup
  • *4 tablespoon brown sugar
  • 2 teaspoon baking powder
  • a pinch of salt
  • 120 g vegan chocolate chips

Instructions

  • Preheat the oven to 180 degrees.
  • Line a 20 x 15 x 4 cm baking tin with parchment paper.
  • Place all the ingredients except the chocolate chips in a food-processor and process until creamy and smooth. Fold in the chocolate chips and spread the batter evenly in the prepared tin.
  • Bake in the center of the oven until the edges are browned and the center is completely set, about 45-50 minutes.
  • Cool completely, cut into 6-8 pieces and serve with a spoon of coconut whipped cream!
  • Buon appetito!

Notes

*You can use coconut sugar instead.
