Spicy Ramen with Vegetables

- 250 g ramen
- 2 tablespoon olive oil
- 160 g egg substitute total weight with water (optional)
- ½ red pepper thinly sliced
- 100 g mushrooms thinly sliced
- 100 g carrots thinly sliced
- 150 g broccoli coarsely chopped
- *1 tablespoon dark soy sauce
- 2 tablespoon light soy sauce
- **1 tablespoon vegan oyster sauce
- 1 tablespoon chili sauce (optional)
- 150 ml water
- 2 spring onions green part thinly sliced
- 2 teaspoon sesame seeds
Cook ramen al dente, drain and rinse briefly with cold water.
Heat oil in a pan, add egg substitute and cook briefly.
Add pepper, mushrooms, carrots and broccoli and sauté briefly.
Then add the noodles, soy sauce, chili sauce, oyster sauce, 150 ml (⅔ cup) of water. Mix well and sauté for 2-3 minutes more.
Top ramen with scallions and sesame seeds and serve immediately.
*if not available use 2 tablespoons light soy sauce
**if not available use 1 tablespoon light soy sauce
