"One of the first vegan “fish” recipes I’ve tried and it was fast and simple, and the most important- sooo tasty and the textures resembled the one I remember having years ago. Definitely will make it again"
- 1 Block of firm tofu - 1 Sheet of nori -75g (3 tbsp) Vegan mayonnaise -1/2 tbsp Ketchup -1/4 tbsp Cognac -1/4 tbsp Lemon juice -4 tbsp Corn starch

Pat the tofu block dry and cut it into a fillet shape.

Make diagonal cuts into the fillets (to resemble the texture of salmon) being careful not to cut all the way through.

Mix ketchup, mayo, cognac and lemon juice. Add bits of nori into the cuts of the fillets and brush them with the marinade.

Top each fillet with a stripe of nori and brush the stripes with little water so that it sticks perfectly.

Coat the fillets with cornstarch. This will make the outside of the fillet slightly crunchy.

Heat oil in a saucepan over medium heat, fry the fillets for a few minutes on each side until golden.

Serve straight away, with a bowl of salad or any side dish of your liking and enjoy!
