Vegan Lentil Bolognese
"This lentil bolognese is absolutely delicious! I was skeptical at first but my whole family absolutely loved it! This is definitely a keeper!"
– red onion
– celery stick
– olive oil
– tomato paste
– red lentils
– red wine
– canned tomatoes
– salt and pepper
Make the soffritto
Heat oil over medium to high heat. Stir in onion, carrot and celery and brown for 7-8 minutes.
Add in tomato paste and & lentils
Add in tomato paste and cook for another 2 minutes. Then stir in lentils and cook for another 1-2 minutes.
Pour in wine and tomato puree
Next pour in wine and allow to simmer until evaporated. then stir in tomato puree and simmer on low heat for 40 minutes.
Simmer until thick and cooked
Allow the bolognese to simmer until the lentils are cooked. Adjust salt and pepper and serve.
Serve it right away
Use the bolognese to make lasagne, cannelloni, manicotti, ravioli, gnocchi or serve it with tagliatelle (that's the traditional way to serve it).
