Dazu geben wir \u2153 der Pilze in eine K\u00fcchenmaschine und zerkleinern sie ein paar Sekunden lang, dann geben wir sie in eine Sch\u00fcssel und wiederholen den Vorgang mit dem Rest der Pilze.<\/p>\n\n\n\n<p>Ich empfehle, die K\u00fcchenmaschine nicht zu sehr zu f\u00fcllen, damit die Pilze gleichm\u00e4ssig zerkleinert werden k\u00f6nnen.<\/p>\n\n\n\n<p>Wenn alle Pilze gehackt sind, erhitzen wir etwas Oliven\u00f6l in einer Pfanne und sobald es heiss ist, fangen wir an, die Pilze unter gelegentlichem R\u00fchren anzubraten. <\/p>\n\n\n\n<p>Wenn die gesamte Fl\u00fcssigkeit der Pilze verdunstet ist und die Pilze goldbraun sind, geben wir sie in eine Sch\u00fcssel und beginnen mit der Zubereitung des <em>Soffritto<\/em>.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" width=\"1200\" height=\"1743\" src=\"https:\/\/carlocao.com\/wp-content\/uploads\/2022\/05\/CAR0802.jpg\" alt=\"Bild: Pilze am kochen\" class=\"wp-image-23800\" srcset=\"https:\/\/carlocao.com\/wp-content\/uploads\/2022\/05\/CAR0802.jpg 1200w, https:\/\/carlocao.com\/wp-content\/uploads\/2022\/05\/CAR0802-207x300.jpg 207w, https:\/\/carlocao.com\/wp-content\/uploads\/2022\/05\/CAR0802-705x1024.jpg 705w, https:\/\/carlocao.com\/wp-content\/uploads\/2022\/05\/CAR0802-768x1116.jpg 768w, https:\/\/carlocao.com\/wp-content\/uploads\/2022\/05\/CAR0802-1057x1536.jpg 1057w, https:\/\/carlocao.com\/wp-content\/uploads\/2022\/05\/CAR0802-720x1046.jpg 720w, https:\/\/carlocao.com\/wp-content\/uploads\/2022\/05\/CAR0802-360x523.jpg 360w, https:\/\/carlocao.com\/wp-content\/uploads\/2022\/05\/CAR0802-180x261.jpg 180w\" sizes=\"(max-width: 1200px) 100vw, 1200px\" \/><\/figure>\n\n\n\n<p>Um das Soffritto zuzubereiten, hacken wir zun\u00e4chst die Zwiebel, die Karotten, den Knoblauch und den Sellerie klein.<\/p>\n\n\n\n<p>Dann erhitzen wir in derselben Pfanne, in der wir die Pilze angebraten haben, reichlich Oliven\u00f6l. Dann geben wir die Champignons hinzu, mischen gut und l\u00f6schen das Ganze mit dem Rotwein ab. Wir lassen die die Sauce kochen, bis der Wein vollst\u00e4ndig verdunstet ist.<\/p>\n\n\n\n<p>Dann geben wir die Tomaten hinzu und wir schmecken das Ganze mit Salz und Pfeffer ab. Wir schmelzen die Pflanzenbutter in einer grossen Pfanne. Sobald es geschmolzen ist, f\u00fcgen wir das Mehl hinzu und mischen alles gut.<\/p>\n\n\n\n<p>Dann nach und nach geben wir die Sojamilch hinzu und r\u00fchren dabei immer kr\u00e4ftig um.<\/p>\n\n\n\n<p>Sobald die gesamte Pflanzenmilch eingearbeitet ist, f\u00fcgen wir den Sauerrahm hinzu und mischen alles gut durch. Wenn du also nicht so viel Zeit hast, empfehle ich dir, vorgefertigte Cannelloni zu verwenden. Wir mischen alles ein paar Sekunden lang, bis eine klumpige Masse entsteht (die Masse sollte keine Kugel bilden, f\u00fcge bei Bedarf Mehl hinzu).<\/p>\n\n\n\n<p>Dann legen wir die Masse auf eine saubere Oberfl\u00e4che und formen sie zu einer Kugel.
