F\u00fcr diejenigen, die es nicht wissen: Traditionelle Butter wird durch eine chemische Reaktion namens <em>Maillard-Reaktion<\/em> gebr\u00e4unt. <\/p>\n\n\n\n<p>Um einen \u00e4hnlichen Effekt mit veganer Butter zu erzielen, m\u00fcssen wir eine Pflanzenbutter verwenden, die N\u00fcsse enth\u00e4lt.<\/p>\n\n\n\n<p>Heutzutage werden viele Butter-Ersatz aus Mandelmus, Cashewmilch usw. hergestellt, es sollte also nicht allzu schwierig sein, ein solches Produkt zu finden. Denselben Effekt erzielt man, wenn man die Ravioli vor dem Kochen eine Stunde lang auf einem Tuch trocknen l\u00e4sst.<\/p>\n\n\n\n<p>So machen wir den Teig: wir geben das Mehl auf eine saubere Arbeitsfl\u00e4che, machen eine Mulde in das Mehl und geben die Zitronenzesten und den in 150 ml Wasser aufgel\u00f6sten Safran dazu. <\/p>\n\n\n\n<p>Dann mit einer Gabel schlagen wir den Teig, wobei wir nach und nach das Mehl einarbeiten, sodass eine Creme entsteht. <\/p>\n\n\n\n<p>Wenn der Teig Form annimmt und nicht mehr klebt, kneten wir ihn kr\u00e4ftig mit den H\u00e4nden. Nachdem wir den Teig mindestens 5 Minuten lang geknetet haben, sollte er eine glatte und weiche Konsistenz haben. <\/p>\n\n\n\n<p>Wir formen eine Kugel, wickeln sie in Frischhaltefolie und lassen sie f\u00fcr 15-20 Minuten im K\u00fchlschrank ruhen. Ich bevorzuge die Nudelmaschine, die du auf dem Foto unten siehst, weil sie diesen Prozess einfacher macht. Du kannst aber auch ein Nudelholz verwenden.<\/p>\n\n\n\n<h2 id=\"ravioli-teig-mit-pastamaschine-ausrollen\"   class=\"wp-block-heading\">Ravioli Teig mit Pastamaschine ausrollen<\/h2>\n\n\n\n<p>Wir nehmen den Teig aus dem K\u00fchlschrank, wickeln ihn aus und schneiden wir ihn in 2 Teile. Den zweiten Teil wickeln wir wieder in das Klarsichtfolie ein. <\/p>\n\n\n\n<p>Wir formen den Teig zu einem Rechteck (die Form muss nicht perfekt sein) und stellen die Walzen der Pastamaschine auf die breiteste \u00d6ffnung ein. <\/p>\n\n\n\n<p>Wir drehen den Nudelteig durch die Rollen durch und wiederholen den Vorgang 2 \u2013 3 mal. Bei Bedarf k\u00f6nnen wir das Teigst\u00fcck mit etwas Mehl (am besten mit Reismehl) best\u00e4uben. <\/p>\n\n\n\n<p>Sobald der Teig sch\u00f6n glatt ist, k\u00f6nnen wir die Walzen 1 Stufe enger stellen und den Vorgang wiederholen. Du kannst eine H\u00e4lfte mit der Frischhaltefolie bedecken und sie beiseite stellen.<\/p>\n\n\n\n<p>Bemehle eine saubere Arbeitsfl\u00e4che (Reismehl eignet sich am besten). Forme den Teig zu einem etwa 15 cm breiten Rechteck und rolle ihn mit einem Nudelholz auf eine Dicke von 2 mm aus. <\/p>\n\n\n\n<p>Sobald dies der Fall ist, wiederhole den Vorgang mit dem zweiten Teig.<\/p>\n\n\n\n<h2 id=\"zitronen-ricotta-fuellung-zubereiten\"   class=\"wp-block-heading\">Zitronen Ricotta F\u00fcllung Zubereiten<\/h2>\n\n\n\n<p>Sobald die Teigbl\u00e4tter bereit sind, k\u00f6nnen wir die Ricotta- und Zitronenf\u00fcllung zubereiten. <\/p>\n\n\n\n<p>Als erstes geben wir den Ricotta in einen grossen Beh\u00e4lter. Ich habe <a href=\"https:\/\/carlocao.com\/de\/cremiger-mandel-ricotta-selber-machen\/\">Mandel-Ricotta<\/a> verwendet (das Rezept findest du <a href=\"https:\/\/carlocao.com\/de\/cremiger-mandel-ricotta-selber-machen\/\">hier<\/a>), aber du kannst jeden pflanzlichen Ricotta verwenden, den du auf dem Markt findest.<\/p>\n\n\n\n<p>Zum Ricotta f\u00fcgen wir dann Zitronenzesten, Zitronensaft und eine grossz\u00fcgige Prise Pfeffer hinzu. <\/p>\n\n\n\n<p>Wir vermengen das Ganze und unsere F\u00fcllung ist fertig. Dabei ist es wichtig, dass so wenig Luft wie m\u00f6glich mit einschliesst wird. Auf diese Weise k\u00f6nnen sie bissfest gekocht werden.<\/p>\n\n\n\n<h2 id=\"einfrieren\"   class=\"wp-block-heading\">Einfrieren<\/h2>\n\n\n\n<p>Wenn du die Ravioli einfrieren m\u00f6chtest, kannst du das tun, nachdem sie getrocknet sind. Gib sie in einen Gefrierbeutel und friere sie ein. Es ist schwierig, eine genaue Kochzeit anzugeben, da die Kochzeit davon abh\u00e4ngt, wie trocken die Ravioli sind. <\/p>\n\n\n\n<p>Je trockener sie sind, desto l\u00e4nger ist die Kochzeit.
