Ich weiss, das klingt nach viel Zeit, aber du musst nur etwa 45 Minuten aktiv arbeiten. Panettone ist ein fettreiches Geb\u00e4ck mit einem erheblichen Gewicht, deshalb m\u00fcssen wir ein Weissmehl mit 15,5 % Eiweiss pro 100 g Mehl verwenden.<\/p>\n\n\n\n<p>In Italien wird diese Art von Mehl <a href=\"https:\/\/clienti.loconteshop.com\/prodotto\/farina-manitoba\/\">Manitoba<\/a> genannt und hat einen W-Wert von 460. F\u00fcr diejenigen, die es nicht wissen: Der W-Wert gibt die St\u00e4rke des Mehls an und damit die Menge an Eiweiss, die es pro 100 g des Produkts enth\u00e4lt. Ein Wert von 460 entspricht 15,5 Gramm Eiweiss pro 100 Gramm Mehl.<\/p>\n\n\n\n<p>Warum ist es wichtig, ein Mehl mit so viel Eiweiss zu verwenden? Weil die Zugabe von Wasser zu einem proteinreichen Mehl die Hydratation von zwei Arten von Proteinen bewirkt: Gliadin (verantwortlich f\u00fcr Elastizit\u00e4t) und Glutenin (verantwortlich f\u00fcr Stabilit\u00e4t und Festigkeit). Die Hydratation dieser beiden f\u00fchrt zur Bildung des sogenannten Gluten-Netzwerks.<\/p>\n\n\n\n<p>Das Gluten-Netzwerk hat zwei wichtige Aufgaben: Es hilft dem Teig beim Aufgehen, indem es die w\u00e4hrend der Gehzeit entstehenden Gasblasen einf\u00e4ngt, und es h\u00e4lt die Struktur des Teigs intakt, indem es verhindert, dass der Teig zusammenf\u00e4llt, sobald er mit Luftblasen gef\u00fcllt ist.<\/p>\n\n\n\n<p>Da Panettone reich an Fetten ist, muss das Mehl, das wir verwenden, in der Lage sein, ein Glutennetzwerk zu bilden, das das Gewicht des Teigs tragen kann, ohne zusammenzufallen. Wenn du es gefunden hast, geh zum n\u00e4chsten Teil dieses Blogposts (du Gl\u00fcckspilz!).<\/p>\n\n\n\n<p>Manitoba-Mehl oder ein Weissmehl mit 15,5 % Eiweissanteil zu finden, kann schwierig sein. Nachdem ich mir tagelang den Kopf zerbrochen habe, wie ich es bekommen kann, kam mir der Gedanke, dass ich es vielleicht selbst herstellen k\u00f6nnte. Also habe ich mein Mehl mit Weizenglutenpulver angereichert.<\/p>\n\n\n\n<p>So funktioniert's (wir m\u00fcssen jetzt ein bisschen Mathe machen, sorry). F\u00fcr dieses Rezept brauchen wir 400 g starkes Mehl mit 15,5 % Eiweiss. Das Allzweckmehl, das ich verwende, enth\u00e4lt 11 g Eiweiss pro 100 g des Produkts. Meinem Mehl fehlen also 4,5 g Eiweiss pro 100 g, um als stark zu gelten. Um 18 g Eiweiss zu meinen 400 g Mehl hinzuzuf\u00fcgen, muss ich 22.5 g Weizenglutenpulver hinzuf\u00fcgen. Aber wie formt man das? Ganz einfach: durch Kneten des Teigs. <\/p>\n\n\n\n<p>Durch das Kneten werden die Glutenstr\u00e4nge st\u00e4rker und l\u00e4nger, was im Grunde genommen bedeutet: Je mehr der Teig geknetet wird, desto st\u00e4rker wird das Glutennetz.<\/p>\n\n\n\n<p>Leider l\u00e4sst sich dieser Prozess nicht von Hand durchf\u00fchren. Ich habe es schon mehrmals versucht und es ist mir nie gelungen, einen Teig mit ausreichender St\u00e4rke herzustellen. Ausserdem ist der Teig dann superelastisch und fast unzerbrechlich. Wenn du mit deinen Fingern an einem Teil des Teigs ziehst, sollte er einen d\u00fcnnen, fast durchsichtigen Schleier bilden. In diesem Fall muss der Teig nicht besonders stark sein, weil die Panettoni klein sein werden. Also kannst du normales Allzweckmehl benutzen.<\/p>\n\n\n\n<p>So machst du es: Sobald der dritte Teig fertig ist, teilst du ihn in etwa 15 tischtennisballgrosse Kugeln. F\u00fclle eine Muffinform mit etwa 15 F\u00f6rmchen und gib in jedes F\u00f6rmchen eine Teigkugel. <\/p>\n\n\n\n<p>Decke sie mit Folie ab und lass sie aufgehen, bis sie ihre Gr\u00f6sse verdoppelt haben. Bestreiche sie mit Mandelglasur und backe sie im Ofen bei 180 \u00b0C (360 \u00b0F) f\u00fcr 15-20 Minuten. In nur wenigen Minuten kann sie einen elastischen und glatten Teig mit einem starken Glutennetzwerk zaubern. <\/p>\n\n\n\n<p>Das einzige Problem ist, dass sie im Gegensatz zu einer Knetmaschine dazu neigt, den Teig zu erhitzen.<\/p>\n\n\n\n<p>Die Bakterien in der Bierhefe (die f\u00fcr das Aufgehen des Panettone verantwortlich sind) sterben ab, sobald die Teig-Temperatur 38\u00b0C erreicht. Der Tod der Hefe ist der Tod deines Panettone. <\/p>\n\n\n\n<p>Lange Rede, kurzer Sinn: Du willst, dass die Bakterien gesund bleiben. Deshalb solltest du den Teig nicht zu stark erhitzen. Sie besteht aus nur 4 Zutaten: Mandeln, Zucker, Aquafaba und Perlzucker. <\/p>\n\n\n\n<p>Diese Glasur ist knusprig, nicht zu s\u00fcss und sie schmeckt nach ger\u00f6steten Mandeln! Sie ist absolut umwerfend perfekt! Also bitte nicht weglassen! Ich bin verr\u00fcckt nach kandierten Orangen, also f\u00fcge ich sie hinzu. Wenn du sie nicht magst, kannst du sie auch weglassen oder durch dunkle Schokoladenst\u00fcckchen ersetzen.<\/p>\n\n\n\n<p>Manche Leute geben auch rehydrierte Rosinen dazu (ich nicht). Es gibt eine Menge Anleitungen im Internet. <\/p>\n\n\n\n<p>Ich habe nie versucht, eine zu machen, aber ich bin mir sicher, dass sie gut funktionieren. In meinem Ofen backe ich den Panettone bei 180 \u00b0C (360 \u00b0F) 60 Minuten lang auf der untersten Schiene des Ofens.<\/p>\n\n\n\n<p>Nach den ersten 15 Minuten decke ich die Oberseite mit Folie ab, damit er nicht anbrennt. So wird verhindert, dass er zusammenf\u00e4llt.<\/p>\n\n\n\n<p>Bei diesem Rezept habe ich das noch nie gemacht und das Ergebnis ist fantastisch. Du kannst diesen Teil also auslassen.<\/p>\n\n\n\n<h2 id=\"panettone-aufbewahren\"   class=\"wp-block-heading\">Panettone aufbewahren<\/h2>\n\n\n\n<p>Der Panettone sollte in Frischhaltefolie eingewickelt und in einen Beutel mit Reissverschluss gelegt werden. Er kann bei Zimmertemperatur 5-7 Tage aufbewahrt werden. <\/p>\n\n\n\n<p>Wenn du ihn l\u00e4nger aufbewahren willst, wickle ihn fest in Folie ein und friere ihn ein.
